Low Carb Slaw

I was making pulled pork this week and decided I needed the perfect, summer side to go with… cole slaw. I’ve always been a fan of the sweeter versions so I thought this would be the perfect opportunity to make a sweet, low carb version to enjoy!

Ingredeients:

1 12oz. Bag shredded  cabbage mix
2 Green onions, chopped
1/2 c. Mayonnaise
1/2 c. Sour cream
1 Tbsp. Spicy mustard
1 Tbsp. Lemon juice
2 Tbsp. Sweetener (I used this)
2 Tbsp. Rice vinegar (I used this)
2 tsp. Celery seed
2 tsp. Onion powder
Salt & pepper
  1. Mix everything except the cabbage mix together. Salt and pepper to taste.
  2. Add cabbage mix. I prefer to lid the container and just shake it together. Refrigerate for an hour or so.
